Masala simply means a spice mixture, spice blend, or seasoned spice preparation. It does not point to one fixed flavor. A masala can be warm and sweet like garam masala, sour and salty like chaat masala, chile-red like tandoori masala, peppery and broth-friendly like rasam powder, roasty and lentil-rich like sambar powder, or whole-seed based like panch phoron.
