How do I use dried morels without making them gritty?

It's rare, but when it happens grit in dried morels almost always comes from soil trapped in those honeycomb pits, not from poor quality mushrooms - and it's easy to avoid with the right rehydration method.

  • Soak your Hand-picked Dried Morel Mushrooms, 1 oz in warm water for 20-30 minutes, swishing gently to loosen any debris.
  • Lift the morels out of the water rather than pouring the water off them - this leaves the grit behind in the bowl instead of back on the mushrooms.
  • Give them a quick second rinse if needed, then pat dry before cooking.
  • Strain the soaking liquid through a coffee filter or cheesecloth and save it - it makes a wonderful mushroom stock for whatever dish you're building.
